Mix for Madeleines Gluten Free

Mix for Madeleines Gluten Free
Sugar, starch (corn), rice flour, humectant: E420, inulin (chicory), starch (rice), emulsifier: E475, E471, salt, psyllium fibers, raising agent: E450, E500, preservative: E202, thickener: E464, E412, E415, flavouring, enzymes.
May contain: egg, soy, milk, nuts, mustard and sesame.
Store in a dry place, at room temperature. Do not expose to temperature change and heat sources.

Process the eggs at room temperature and melt the butter.
Add the mix, eggs and butter to a bowl.
Fold the batter with a spatula until smooth.
Do not use a mixer, as no air bubbles should be incorporated into the batter.
Fill a decorating bag with the batter.
Place the decorating bag and the baking mould in the refrigerator for 1.5 to 2 hours.
Preheat the oven to 215°C (top and bottom heat).
With a convection oven, the characteristic Madeleine hump cannot be guaranteed.
Spray the pan in with Bake Release Spray.
Make sure the madeleine pan is cold before filling it. Using a decorating bag, fill each mould about 2/3 full with batter (approx. 25 g per Madeleine).
Bake the Madeleines for 8-10 minutes. Keep a close eye on them from 8 minutes onwards.
