Mix for Sponge Cake Gluten Free

Mix for Sponge Cake Gluten Free
Sugar, rice flour, starch (corn, potato), milk powder (skimmed), starch (rice), raising agent: E450, E500, emulsifier: E475, E471, salt, thickener: E412, colour: E160a.

Store in a dry place, at room temperature. Do not expose to temperature change and heat sources.

Ingredients need to be at room temperature.
For a Ø 20 cm baking pan, use: 250 g mix, 4,5 eggs (230 g) and 20 ml water.
For a Ø 30 cm baking pan, use: 500 g mix, 9 eggs (460 g) and 40 ml water.
Preheat the oven to 175°C (convection oven 165°C).
Put the mix, eggs and water in a bowl.
Beat at high speed with a whisk for 8-10 minutes.
Then mix at low speed for another 2-3 minutes.
Grease the baking pan with Bake Release Spray.
Fill the greased baking pan up to two thirds with the batter.
Bake the sponge cake in the middle of the preheated oven.
For a Ø 20 cm sponge cake, bake 30-40 minutes.
For a Ø 30 cm sponge cake, bake 45-50 minutes.
Release the cake from the baking pan immediately after baking and let it cool down on a cake grid.
