What is the best way to store buttercream?

in the fridge

Store your prepared buttercream well-covered in the fridge and use it within a few days. Make sure your fridge is clean, at the correct temperature, and avoid contact with other food. Buttercream easily absorbs flavors from strong-smelling ingredients like garlic.

In the freezer

Buttercream can also be frozen! Make sure to cover it well after preparation. The best option is to use a ziplock bag. Store it in the freezer for up to 3 months. Let the buttercream thaw slowly in the fridge, and for the best results, whip it with a mixer on the highest setting for 8 minutes.

TIP to prevent curdling

If your buttercream curdles unexpectedly due to the ingredients, it can be frustrating, but it’s certainly not the end of the world. It might happen if the butter is slightly colder than the mixture – no worries! You can place the bowl in a larger bowl with warm water for a while and then mix it again. However, the easiest solution is to simply keep mixing until it becomes smooth and creamy. The buttercream will come back together – guaranteed!

Tip

Swiss Meringue buttercream

Swiss Meringue Buttercream is slightly less sweet than regular buttercream and is perfect for filling, coating, and decorating cakes and cupcakes. This buttercream contains egg white powder, which makes it lighter and less heavy. It is also easy to make yourself – just add water and butter, and you’re ready to go!
