Arabic Gum
Arabic Gum is completely vegetable and can be used as a stabilizer and binding agent. In baking, it is mainly used to stabilize the texture of products, increase the viscosity of liquids and make baked goods rise. Arabic Gum gives a soft structure and is therefore widely used in the making of candy, ice cream, aromas, sweeteners and more. It can also be used to add a nice shine or glossy look to certain foods, to coat foods or to prevent sugar crystallization. Arabic Gum is colour- and tasteless.
