Xanthan Gum
Xanthan gum is a completely tasteless powder that binds, absorbs moisture and traps air bubbles. Thus, it is often used as a thickener in sauces, puddings or honey. Xanthan gum is also an emulsifier, which binds products that normally cannot or hardly be mixed (e.g. water and oil). In the cake decorating world, xanthan gum is also widely used for making edible glue, gum paste and pastillage. Often you only need a teaspoon or less, so this jar from FunCakes will last a long time!

To make edible glue: mix 1/4 teaspoon of xanthan gom with 4 tablespoons of water. Let the mixture rest for 10-20 minutes until the gom is completely dissolved. The result is a clear, colourless edible glue.
To make gum paste: knead 5 g xanthan gom with 250 g fondant. Then let it rest for 20-30 minutes before using.
To make pastillage: mix 1 teaspoon xanthan gom with 100 g royal icing. Let it rest for about 1 hour before using it.
