Cold Juice Binder

The FunCakes Cold Juice Binder is used to bind fruit with liquids, for example when making firm fruit fillings for cakes. It increases the carrying capacity of your filling, so that cakes or pastries keep their original shape. The ideal binding agent for making firm and freezing stable pies, pastries and fruit jellies. Finally, with the Cold Juice Binder you can preserve fruit without heating it.

Cold Juice Binder

Modified starch, maltodextrin, gelling agent: E450, E339, E516, thickener: E401.

May contain traces of: egg, soy, milk.

Store in a cool, dry place, 15-20°C.

Preparation of Cold Juice Binder


Mix the cold binder with moist/juice. Keep a dosage of 15% cold binder: so use 75 g of cold binder for 500 ml of moist/juice.


If desired, add sugar to taste.


Fold your fruit into the mixture and process the pie filling as desired.
