What you need to make your christmas dessert with lebkuchen and sea buckthorn bavarois:

  • 500 g FunCakes Mix for Gingerbread
  • 250 g FunCakes Mix for Royal Icing
  • 100 g FunCakes Bavarois Natural
  • 75 g FunCakes Mix for Enchanted Cream®
  • FunCakes Flavour Paste Lebkuchen
  • FunCakes Flavour Paste Sea Buckthorn
  • FunCakes Chocolate Crispy Pearls Mix
  • 500 ml whipped cream
  • 210 ml water
  • 75 ml milk
  • 60 g unsalted butter
  • 1 egg (approx. 50 g)

Recipe of Christmas dessert with Lebkuchen and Sea Buckthorn bavarois

Prepare 500 g of FunCakes Mix for Gingerbread as indicated on the package, wrap in cling film and put it in the fridge for 1 hour.

Preheat the oven to 180°C (convection oven 160°C) and line a baking tray with a sheet of parchment paper.

Knead the gingerbread from the fridge well until smooth and roll it out to a thickness of about 2-3 mm on a floured work surface. From this, cut out shapes of your choice. Bake the cookies for about 8-13 minutes until crisp (depending on thickness) and let them cool down on the countertop.

Whip 250 ml whipping cream per taste. Mix 50 g FunCakes Bavarois Naturel with 60 ml water and some of the flavor paste Lebkuchen and Sea Buckthorn. Mix this mixture directly into the whipped cream and leave to set in the refrigerator for 2 hours.

Prepare 250 g FunCakes Mix for Royal Icing with 30 ml water according to instructions on the package. Put some in a decorating bag with an adaptor and decorating tip #001. Decorate as many cookies with the royal icing as you need to decorate your dessert. Let the royal icing dry.

Chop some of the remaining gingerbread cookies. Put the two flavours of bavarois in separate decorating bags. Put some of the gingerbread crumb in the bottom of the glasses. Swirl a layer of lebkuchen flavourred bavarois on top. Put some gingerbread crumb on top again and then a layer of sea buckthorn flavored bavarois. Put back in the refrigerator and make the 75 g FunCakes Mix for Enchanted Cream® with 75 ml of milk according to instructions on the package. Put this in a decorating bag with tip #1M and swirl nice tufts on the bavarois.
