Dark choco velvet bavarois pastries
Dark chocolate and raspberry are two flavours that go really well together. With this velvet bavarois pastry you’ll have the best of both worlds! Use the velvet spray to give it a fun look and top if off with some sprinkles.
What you need to make your dark choco velvet bavarois pastries:
Ingredients
- 50 g FunCakes Mix for Bavarois Natural
- FunCakes Flavour Paste Raspberry
- FunCakes Velvet Spray Dark Choco
- FunCakes Mini Chocolate Crispy Pearls Mix
- 250 ml whipped cream
- 60 ml water
- Mini caramel cookies (stroopwafels)

- Silikomart Siliconen 3D Design Mould - Mini Girotondo
Whip the cream until fluffy. Prepare the FunCakes Mix for Bavarois Natural according to the instructions on the packaging and add the flavour paste. Immediately fold it through the whipped cream and put it in a decorating bag.
Cut a tip from the decorating bag and divide the bavarois between the moulds. Wiggle the mould a little to get the print in the bavarois. Cover with a mini caramel cookie (stroopwafel). Put in the freezer for 24 hours. The pastries must be frozen or they will not come out of the moulds.
Tip: If you need more than 6 pastries, you can easily make the bavarois pastries in advance and keep them in a box in the freezer after removing them from the mould. Please note that if you make more pastries, you should adjust the quantities of ingredients.
Place the FunCakes Velvet Spray Dark Choco in a bowl of warm water. This is necessary to get the cocoa butter liquid.
Take the bavarois cakes out of the freezer and spray the velvet spray on them.
Decorate with some sprinkles and place the pastries on a tray or in a box in the fridge so that they can defrost slowly.
