Easter cake roll

  • 400 g FunCakes Mix for Limoncello Cake
  • 200 g FunCakes Mix for Buttercream
  • FunCakes Flavour Paste Lemon Meringue
  • FunCakes Food Colour Gel Yellow
  • FunCakes Food Colour Gel Bright Green
  • FunCakes Deco Melts Yellow
  • FunCakes Deco Melts White
  • FunCakes Icing Sugar
  • 425 g unsalted butter
  • 4 eggs (approx. 200 g)
  • Small Easter eggs
  • Edible flowers

Recipe of Easter cake roll

Preheat the oven to 170°C (convection oven 150°C).

Prepare 400 g FunCakes Mix for Limoncello Cake according to the instructions on the packaging. Line the baking tray with parchment paper. Spray the edges with baking spray. Spread the cake batter on the baking tray and bake for approximately 18-22 minutes.

Prepare 200 g FunCakes Mix for Buttercream according to the instructions on the package. Flavour the buttercream with the FunCakes Flavour Paste Lemon Meringue.

Sprinkle a tea towel generously with sugar baking powder and pour the baked cake slice onto it. Remove the parchment paper and carefully roll up the cake with the tea towel. Let it cool down almost completely.

Color a few generous tablespoons of the buttercream soft yellow with the coloring gel. Once cooled, carefully unroll the cake slice and spread a thin layer of yellow lemon meringue buttercream between it and roll back up. Wrap the roll in cling film and let it stiffen in the refrigerator.

Color the rest of the buttercream soft green with the color gel and spread this all over the outside of the cakerole. Let this set in the fridge.

Melt some of the white and yellow FunCakes Deco Melts according to the instructions on the package and put the white Deco Melts in a decorating bag. Cut off a tip and drizzle this over the cakerole. Allow to set in the refrigerator again.

Put some melted yellow Deco Melts in the half eggs, spread well with the back of a teaspoon or a brush and let it stiffen in the fridge. Repeat this 2 more times for firmness.

Stick the half eggs with some buttercream on the cake roll and fill them with small Easter eggs. Decorate further with some edible flowers.
