Christmas mice cake

Preheat the oven to 180°C (convection oven 160°C) and grease the baking pans with baking spray.
Prepare 250 g FunCakes Mix for Sponge Cake Deluxe as indicated on the packaging. Pour the batter into the 20 cm baking pan and bake the sponge cake for 30-35 minutes. After baking, turn the sponge onto a cooling rack and let it cool completely.
Repeat these steps with another 250 g FunCakes Mix for Sponge Cake Deluxe, this time dividing the batter between a 15 cm and a 10 cm baking pan. Bake these sponges for 30-35 minutes and cool them on a rack as well.
Prepare 300 g FunCakes Mix for Buttercream as indicated on the packaging and flavour it with a flavour paste of your choice. Slice all three sponge cakes horizontally into two or three layers using a cake leveller. Fill the layers with buttercream and coat the outside of each cake with a thin layer. Smooth the coating with a side scraper; a thick buttercream layer is not necessary. Chill the cakes in the fridge for an hour.
Knead the FunCakes Covering Paste until smooth, roll it out thinly, and cover the cakes.
Place the 20 cm cake on a red drum and insert four dowels, cutting them to size. Add a bit of buttercream between the dowels and place a cut-to-size cake board on top. Stack the 15 cm cake on the board and repeat the steps with three dowels for the 10 cm cake. Use a small amount of buttercream to secure the smallest cake on top.
Melt the FunCakes Deco Melts White as indicated on the packaging. Pour the melted Deco Melts into a decorating bag, cut off a small tip, and create a beautiful white drip along the edges of all cakes. Melt the green Deco Melts and pour them into a swirl chocolate mould. Let the chocolate set in the fridge for about 20 minutes, then gently remove the chocolates from the mould. Decorate some chocolates as presents by adding fondant ribbons and bows.
Prepare 75 g FunCakes Mix for Enchanted Cream® as indicated on the packaging. Place the cream in a decorating bag with decorating tip #4B and pipe a decorative border along the cake edges.
Decorate the cake with confetti, gold rods, red marzipan roses, gold stars, and crispy pearls. Add green chocolates or sugar paste presents to the design.
To make the mice, colour a small piece of white sugar paste with FunCakes Ivory Colour Gel in a dark shade. Use this for the tails, feet, ear interiors and noses. Shape a mouse from a solid piece of white sugar paste and use a ball tool to create small eye sockets. Insert black sugar pearls for the eyes. Attach the ears, tails, and other features with edible glue. Finish the mice with scarves and hats made from red, green, or black glitter sugar paste.
Finally, create candy canes from red and white glitter sugar paste by rolling and twisting two strips together. Shape the top into a curve and trim the bottom straight. Attach the candy canes and mice to the cake for the final touch. Your stunning tiered cake is now ready to steal the show!
