  • 500 g FunCakes Mix for Sweet Cookie & Crust
  • FunCakes Almond Paste 1:1
  • FunCakes Speculoos Spice
  • 2 eggs (approx. 100g)
  • 155 g unsalted butter
  • FunCakes Magic Roll-Out Powder
  • Almond flakes

Recipe of Filled speculoos with almond flakes

Prepare 500 g FunCakes Mix for Sweet Cookie & Crust according to the instructions on the package and add FunCakes Speculoos spices to taste. Wrap the dough in cling film and let it set in the fridge for at least an hour.

Preheat the oven to 180°C (convection oven 160°C).

Line the bottom of the baking pan with a suitable piece of parchment paper and spray the edges with FunCakes Bake Release Spray. Knead the dough from the fridge until smooth and divide it into two pieces. Mix the FunCakes Almond Paste with ½ to 1 egg until smooth.

Roll out 1 part on some flour and line the bottom of the baking pan with it. Divide the prepared almond paste over it, staying about half a cm from the edge. Roll out the second piece of dough and place it over the almond paste, pressing the edges slightly. Sprinkle some almond shavings over it and bake the cake for about 30-35 minutes until lightly browned and baked through. Let it cool in the baking pan.
