Dutch Kano's cookies filled with almond paste

What you need to make your dutch kano's cookies filled with almond paste:

Ingredients

  • 400 g FunCakes Mix for Cookies
  • 250 gram FunCakes almond paste
  • 125 g unsalted butter
  • 20 gram sugar
  • 1 egg (aproxx. 50 g)

  • PME Plastic Cutter Oval

Recipe of Dutch Kano's cookies filled with almond paste

Prepare 400 gram FunCakes Mix for cookies as indicated on the package. Let it rest in the fridge for at least one hour.

Preheat the oven to 180°C (convection oven 160°C).

Sprinkle some flour onto your work surface and roll out the dough until it is about 1 cm thick. Cut out circles and place these on a baking tray that is either greased or covered with baking paper.

On each circle, place a ball of almond paste, which is smaller than the dough in size. Now place a second circle on top and brush the top with some egg. Place an almond on top and again brush with egg wash.

Grease the cutter(s) or baking tray(s) and place them over the biscuit. Bake in the oven for approx. 25 minutes until golden brown.

Tip! On this way you can also make speculoos rondos. Knead approx. 15 gram of speculoos spices into the dough. Leave this dough to rest for at least 24 hours so that the spices season it well. Then follow the previously described method.
