Baking cookies
Prepare 500 g FunCakes Mix for Cookies as indicated on the packaging. Wrap the dough in cling film and let it rest in the refrigerator for at least 1 hour.
Preheat the oven to 180°C (convection oven 160°C).
Knead the dough from the refrigerator until smooth and roll it out on a work surface dusted with FunCakes Magic Roll-Out Powder to a thickness of 2-3 mm and cut circles. Place these on a baking tray lined with parchment paper and bake the cookies about 10-13 minutes until fully baked. Let the cookies cool flat on the counter.
Depending on the thickness of the dough, it may sometimes needs to be in the oven a little longer.
Knead the FunCakes Sugar Paste Bright White until smooth and roll it out thinly on a work surface dusted with icing sugar. Cut out circle in the same size as the cookies.
Heat the jar of apricot jam in the microwave and press it through a sieve using the back of a spoon. This will create an apricot glaze to brush onto the cookies. Brush the cookies with the glaze, then place the fondant on top.
Decorate the cookies with the Ready to Use Icing Writers by creating flowers, shapes, swirls or even personalised messages.
