Summerween ghost cookies

These ghost cookies are the perfect combination of spooky Halloween vibes and vibrant summer colours for Summerween. They’re ideal for a Summerween party, as a Halloween treat, or for a fun afternoon of baking.

What you need to make your summerween ghost cookies:

Prepare 500 g FunCakes Mix for Cookies as indicated on the packaging. Wrap the dough in cling film and leave it to firm up in the refrigerator for 1 hour.

Preheat the oven to 180°C (convection oven 160°C) and line a baking tray with parchment paper.

Briefly knead the chilled dough until smooth and roll it out on a lightly floured work surface to a thickness of approximately 2-3 mm. Cut out ghost shapes and place them on the baking tray. Bake the cookies for 9-12 minutes until fully bakked. Allow them to cool completely on a flat surface.

Heat the jar of apricot jam in the microwave and press it through a sieve using the back of a spoon. This will create an apricot glaze to brush onto the cookies.

Knead the FunCakes Sugar Paste Bright White until smooth and roll it out thinly on a work surface dusted with icing sugar. Cut out the same number of ghost shapes as cookies and attach them to the cookies with the apricot glaze. Create folds in the ghosts’ robes by drawing lines with a flute/vein tool.

Knead all pieces of coloured fondant until smooth and cut out blossom flowers. Attach the flowers to the ghosts using edible glue. For the sunglasses, use a slightly larger flower and press a flattened black fondant ball into the centre. Attach this to the ghosts. Finally, use a food pen to finish the sunglasses and draw the eyes and mouths.
