Prepare 500 g FunCakes Mix for Cookies as indicated on the packaging. Divide the dough into 6 pieces. Colour 5 pieces with different FunCakes Food Colour Gel of your choice. Wrap the dough in cling film and leave it to firm up in the refrigerator for 1 hour.

Preheat the oven to 180°C (convection oven 160°C) and line a baking tray with parchment paper.

Briefly knead the chilled dough until smooth and roll it out on a lightly floured work surface to a thickness of approximately 2-3 mm. Cut out letters and numbers and place them on the baking tray. Bake the cookies for 9-12 minutes until fully baked. Allow them to cool completely on a flat surface.

Heat the jar of apricot jam in the microwave and press it through a sieve using the back of a spoon. This will create an apricot glaze to brush onto the cookies. Brush some of the cookies with apricot jelly and decorate them with the FunCakes Sprinkle Medley Alphabet.

Melt the Deco Melts in the microwave according to the instructions on the packaging and dip some of the cookies into the melted Deco Melts. Immediately add some sprinkles and leave to set in the refrigerator for 5 minutes.

Put some melted Deco Melts into a piping bag, cut off a small tip and drizzle over some of the cookies. Leave these to set in the refrigerator as well.
