
Matcha Cookies
These cookies are an absolute dream for every matcha lover! You’ve probably seen the trend already, and of course, we had to give it a sweet FunCakes twist. Turn your classic choco chip cookies into your new favourite matcha cookies. They’re fluffy, slightly chewy and have that delicious, subtle matcha flavour matcha fans can’t get enough of!
What you need to make your matcha cookies:
Ingredients
- 350 g FunCakes Mix for cupcakes
- 75 g FunCakes Mix for Enchanted Cream®
- 100 g FunCakes Chocolate Drops White
- FunCakes Spread Crunchy White Choconut
- 125 g unsalted butter
- 100 ml milk
- 5 g matcha powder
- 1 egg (approx. 50 g)
- Pistachio nuts (chopped)

- FunCakes Parchment Paper Sheets 30x30 cm
- Wilton Decorating Tip #1M
Prepare 350 g of FunCakes Mix for Cupcakes as indicated on the package and add 5g of matcha powder. Finally, add the FunCakes White Chocolate Drops and briefly knead through by hand.
Place a sheet of cling film on the work surface and place the dough on top. Form a roll of about 5-6 cm in diameter and let it firm up in the freezer for at least 2 hours.
Preheat the oven to 200°C (180°C convection oven) and line a baking tray with parchment paper.
Cut slices about 1.5 cm thick and place them with enough space in between on the baking tray. Bake the cookies for 15 to 18 minutes until done. They will still be soft when they come out of the oven but will firm up as they cool.
Prepare 75 g of FunCakes Mix for Enchanted Cream® as instructed on the packaging. Then, add FunCakes Spread Crunchy White Choconut to taste.
Put a decorating tip #1M in a decorating bag and swirl a generous rosette onto the inside of the cookie. Sprinkle some chopped pistachios on top. Cover with a second cookie.
