Cakesickles with red velvet filling

What you need to make your cakesickles with red velvet filling:

Ingredients

  • 330 g FunCakes Mix for Red Velvet Cake
  • 250 g FunCakes Deco Melts Yellow
  • 250 g FunCakes Deco Melts Pink
  • 250 g FunCakes Deco Melts White
  • 250 g FunCakes Deco Melts Lime Green
  • FunCakes Sugar Decorations Tropical
  • FunCakes Icing Sugar
  • FunCakes Bake Release Spray
  • 130 ml water
  • 100 g monchou
  • 55 g (65ml) vegetable oil
  • 2 eggs (approx. 100 g)

Recipe of Cakesickles with red velvet filling

Preheat the oven to 180°C (convection oven 160°C) and grease the baking pan with baking spray.

Prepare 330 g FunCakes Mix for Red Velvet Cake as indicated on the package and pour the batter into the greased baking pan. Bake the cake for about 30-35 minutes until done and let the cake cool down by using a cooling grid.

Melt the FunCakes Deco Melts according to instructions on the package in the microwave. You can make light pink and light yellow by adding white Deco Melts. Coat the ice cream moulds with the back of a teaspoon with the melted Deco Melts, insert the ice cream stick and leave to set in the fridge. Repeat this at least 2-3 more times to get a good hard layer.

Crumble the red velvet cake. Stir the monchou loose with some FunCakes sugar baking powder to your own taste and mix it into the red velvet crumbs. You should get a firm kneadable ‘dough’ so do not add all the monchou at once. Take the ice cream moulds out of the fridge and press some red velvet cake into these. Make sure the cake does not rise above the edges otherwise you won’t be able to spread it nicely. Cover the cake with melted Deco Melts and smooth with a palette knife. Leave to set in the fridge.

Carefully remove the icing from the moulds. Drizzle some more Deco Melts over them if necessary and decorate immediately with the tropical sugar decoration.
