Cake with pecan nuts

A combination of cookie dough, cupcake mix and pastry cream topped with pecans …. Hmm, we dream of it! Delicious with coffee and tea. Delicious!

What you need to make cake with pecan nuts:

Ingredients

  • 600 g FunCakes Mix for Cupcakes
  • 500 g FunCakes Mix for Cookies
  • 100 g FunCakes Mix for Crème Patisserie
  • 475 g unsalted butter
  • 200 ml water
  • 7 eggs (approx. 350 g)
  • 4-5 tablespoons of apricot jelly
  • Pecan in pieces

  • FunCakes Bake Release Spray
  • Wilton decorating tip round

Recipe

Preheat the oven to 180 ° C (convection oven 160 ° C).

Prepare 500 g FunCakes Mix for Cookies as indicated on the package. Let the batter cool in the fridge for at least 1 hour.

Prepare 100 g FunCakes Mix for Crème Patisserie as indicated on the package and let it rest.

Roll out the cooled cookie dough on a floured work surface. Take a baking pan of your choice and use it to cut out the dough. Grease the baking pan and place the dough in the baking pan. Do you work with a baking rim? Then cut the batter out directly onto the greased or parchment-lined baking pan.

Prepare 600 g FunCakes Mix for Cupcakes as indicated on the package. Apply a thin layer of apricot jelly to the cookie dough with a brush or spatula. Then spoon a layer of cupcake batter from about 3 cm over the dough. Spread this evenly using a scraper / spatula.

Now put the pastry cream in a decorating bag and pipe diagonal stripes over it. Now sprinkle the pecans over the cake and bake the cake in the oven for about 35-40 minutes until golden brown. The baking time also depends on the thickness of the cupcake batter and the size of the mold.

Tip: do you use a 24 cm round quiche baking pan? Then halve the ingredients above.
