Rocky road

Ingrédients
- 500 g FunCakes Mix for Cookies
- 500 g FunCakes Deco Melts Dark Chocolate Flavour
- FunCakes Mini Marshmallows
- FunCakes Sugar Decorations – Football Set (8 pieces)
- 150 g unsalted butter
- 1 egg (approx. 50 g)
- Handful of raisins
- M&M's or Smarties

- FunCakes Parchment Paper Sheets – 30 x 30 cm pk/50
- Wilton Performance Pan – Square Baking Tin 20 x 20 cm
- Wilton Wide Glide Rolling Pin – 50 cm
- Patisse Round Cookie Cutter – 8 cm
Prepare the 500 g FunCakes Mix for Cookies as indicated on the packaging. Wrap the dough in cling film and let it chill in the fridge for about an hour.
Remove the dough from the fridge, knead it briefly until smooth, and roll it out on a floured work surface to a thickness of approximately 2–3 mm. Use a round cutter to cut out circles from the dough and place them on a baking tray lined with FunCakes Parchment Paper Sheets.
Preheat the oven to 180°C (160°C for convection oven) Bake the cookiesfor 10 minutes until lightly golden. Then allow them to cool on the counter.
Melt 500 g FunCakes Deco Melts Dark Choco Flavour as indicated in the microwave as indicated on the packaging. Line the base of the tin with FunCakes Baking Paper Sheets and place FunCakes Acetate Roll along the inside edge of the tin. This works best if you lightly moisten the edge with water or spray it with baking spray.
Break the baked cookies into pieces and stir them into the melted Deco Melts. Add FunCakes Mini Marshmallows, a handful of raisins and some M&M’s or Smarties. Spoon the mixture into the tin and press down lightly. Sprinkle over a few extra Smarties and marshmallows, and press in a few pieces of FunCakes Sugar Decorations Football for a festive touch.
Let the Rocky Road in the fridge for about 30 minutes, then store at room temperature.
