Madeleines with pistachio and Deco Melts
These pistachio and rose petal madeleines are perfect for an afternoon tea or special occasion. The madeleines are light, fluffy and easy to make. What do you need more?

Ingredientes
- 400 g FunCakes Mix for Madeleines Gluten Free
- 150 g FunCakes Deco Melts Dark Choco Flavour
- 100 g FunCakes Deco Melts White
- 50 g FunCakes Deco Melts Pink
- FunCakes Edible Dried Flowers Rose Petals
- 4 eggs (approx. 200 g)
- 190 g melted unsalted butter
- Pistachio nuts

- FunCakes Disposable Decorating Bags
- Wilton Madeleine Pan 12-Cavity
Prepare 400 g FunCakes Mix for Madeleines as indicated on the packaging. Fold the mixture together with a spatula until fully combined.
Do not mix the batter with a mixer, as no air bubbles should be incorporated into the batter.
Transfer the batter to a decorating bag and place it in the refrigerator together with the baking mould for 1½ to 2 hours.
Important! Chilling the batter is essential for achieving the best result.
Preheat the oven to 215°C. Use top and bottom heat only. Do not use a convection oven, as the characteristic hump of the madeleine cannot be guaranteed. Allow the oven to fully reach temperature before baking the madeleines.
Remove the pan from the refrigerator, spray it with Bake Release Spray and fill each cavity with approximately 25 g of batter. Bake the madeleines for 8-10 minutes until lightly golden brown and fully baked. Keep a close eye on the oven after 8 minutes.
Remove the madeleines from the pan and allow them to cool completely. Wash the pan and place it back in the refrigerator together with the decorating bag. Once the pan is thoroughly chilled again, fill it with batter and bake another batch of madeleines. Repeat until all the batter has been used.
Roughly chop the pistachios and crumble some dried rose petals. Place the pink and white FunCakes Deco Melts in a bowl to create a light pink colour. Place the FunCakes Deco Melts Dark Choco Flavour in a separate bowl. Melt the Deco Melts according to the instructions on the packaging in the microwave
Dip the madeleines diagonally into the Deco Melts and immediately sprinkle with the chopped pistachios and/or rose petals. Allow them to set in the refrigerator.
