No Bake Bavarois Cake with Fruit and Pistachios

  • 100 g FunCakes Mix for Bavarois Natural
  • FunCakes Glaze Topping Red
  • FunCakes Flavour Paste Raspberry
  • FunCakes Snow Sugar
  • 500 ml whipped cream
  • 170 g caramelised biscuits (about two thirds of a pack)
  • 100 ml water
  • 70-90 g melted butter
  • Fresh raspberries
  • Pistachio nuts
  • Few leafs of mint

Line the base of a springform pan with a sheet of baking paper and clamp the rim around it. Place a strip of FunCakes Acetate Foil along the inside edge of the springform tin.

Tip! This works best if you lightly wet the inside edge of the rim with water or baking spray, so the acetate foil sticks neatly in place.

Mix finely ground caramelised biscuits with the melted butter and use this mixture to cover the base of the springform tin. Press it down firmly and leave toset in the refrigerator for 15 minutes.

Whip 500 ml double cream until softly whipped. Mix 100 g FunCakes Mix for Bavarois with 100 ml water and add FunCakes Flavour Paste Raspberry to taste. Immediately add this mixture into the softly whipped cream. Pour the mixture onto the biscuit base and smooth the top. Leave to set in the refrigerator for at least 4 hours, but overnight is even better.

In this recipe you use less water to prepare the bavarois mix than stated on the packaging, because you are adding a flavour paste.

Remove the cake from the refrigerator, take off the springform rim and remove the acetate foil. Press chopped pistachios gently against the sides of the cake with your hand.

Spread a thin layer of FunCakes Glaze Topping Red over the top of the cake. Decorate the centre with raspberries, a few whole pistachio nuts and some mint leaves. Finally, lightly dust the raspberries with FunCakes Snow Sugar.
