Preheat the oven to 175°C (convection oven 160°C).
Prepare 250 grams of FunCakes Mix for Sponge Cake as indicated on the batter. Fill a lubricated baking pan with the batter (1/2 till 2/3 full) and bake the cake in approx. 30 – 35 minutes. Don’t open the oven between! The cake is ready when it feels springy to the touch. Release the cake immediately after baking and let it cool down on a cooling grid.
Prepare 200 grams of FunCakes Mix for Buttercream as indicated on the package and add crème brûlée flavourpaste to taste. Cut the sponge twice and fill the layers with creme brulee buttercream. Keep a little bit buttercream aside to smear it on the sides of the cake later.
Prepare 100 grams of FunCakes Mix for Crème Patissierie as indicated on the package and add some vanilla seeds. Put the crème patisserie on top of the sponge cake and make sure the layer is divided evenly. Put a thin layer of buttercream on the side of the cake, so every inch of the sponge is covered in a thin layer.
Sprinkle a thick layer of cane sugar on top of the crème patisserie and burn the sugar with a crème brûlée torch until the sugar is melted and dark colored.
