Recette de Birthday rainbow cake

Make the rainbow and cloud toppings two days in advance so that it can dry well. Keep 600 g of white fondant aside to cover the middle cake, colour the other 600 grams with the gels in different colours. Roll out a piece of white fondant to about 2 mm thickness and cut out a few clouds. For the rainbow knead the red, orange, yellow, green, blue, purple and lilac fondant well and roll out even strips. To measure the right size you can use the bottom of the 15 cm baking pan. Place the pan on a piece of baking paper and draw a line around it. Place your fondant strips along the line. Stick them to each other with a little bit of edible glue. Let this dry for two days.

Preheat the oven to 180°C (convection oven 160°C).

For the cake prepare 400 g of FunCakes Mix for Sponge Cake as indicated on the package. Grease the 25 cm baking pan with Bake Release Spray and place the sponge cake batter into the 25 cm pan. Bake the cake for 40-45 minutes, release it directly after baking on a cooling grid and let it cool down.

Grease the other two baking pans with the Bake Release Spray and prepare the other 400 g of FunCakes Mix for Sponge Cake as indicated on the package. Divide the sponge cake batter into the two pans. Bake the cakes for 30-35 minutes, release them directly after baking on a cooling grid and let them cool down.

Roll out all the colours of fondant that you have coloured to a thickness of about 1-2 mm and cut out squares. Place them between cling film so that they remain soft. Meanwhile prepare 400 g of FunCakes Mix for Buttercream as indicated on the package and add to taste the flavourpaste Lemon Meringue to the buttercream.

Cut the sponge cakes twice using a cake leveller and fill and cover with buttercream. Cut the cake board to the size of the small cake, place the cake on top and leave the cakes in the fridge for an hour to make the buttercream stiff.

Cover the middle sponge cake with the white fondant. The remainder you have left you colour orange. Cover the top of the bottom sponge cake with a piece of orange fondant and cut away the excess. Now stick all the created coloured squares against the sides of the bottom cake.

Stick 4 dowels in the bottom cake and cut to size. Spread some Piping Gel along the bottom edge of the middle cake with the brush and press the Discomix against it. Place this cake (incl. cardboard) on the bottom cake and push 4 dowels in this cake as well and cut to size. Then cover the smallest cake with the Discomix by gently pushing the nonpareils with your hand against the cake and place it on top of the other cakes.

Melt the deco melts in the microwave at 450W, stirring now and then. When it is almost melted, take it out of the microwave and stir the visible pieces away in the warm melts. Let it cool slightly. Put the melts in a decorating bag, cut a small tip and let the different colours slide down from the edge on the middle cake.

Insert two skewers into the top of the cake and place the rainbow right in front so it can lean against the skewers, make it stick with a bit of edible glue and a piece of fondant. Place the clouds in front of the rainbow. Leave the cake in the fridge until further use.
