Chocolate cake with ganache and pistachio nuts

  • 380 g FunCakes Mix for Choco Sponge Cake
  • 200 g Deco Melts Dark Choco flavour
  • 200 ml milk
  • 100 ml whipping cream
  • 80 ml water
  • 5 eggs (approx. 250 g)

Preheat the oven to 180°C (convection oven 160°C).

Prepare 190 g FunCakes Mix for Choco Sponge Cake according to the instructions on the package. Fill a greased baking pan and bake the cake in the preheated oven for about 25-30 minutes. Let the cake cool by using a cooling grid. Bake a second cake in the same way.

Note: you need to bake this in two times. This amount of batter is too much to bake in one go in this size of pan!

For the choco ganache, Heat the whipping cream in a pan, but make sure it doesn’t boil. Remove the pan from the heat and stir in the Deco Melts in sections, each section should be melted before adding new Deco Melts. Once all the Deco Melts have been added let it cool, outside the refrigerator, until it has a chocolate paste substance. This will take about 15 to 30 minutes.

Cut the cakes both in half and fill and stack the layers on top of each other with a layer of ganache in between. Start and finish with a bottom layer of the cut cakes, this way your cake will be nicely taut.

Spread a thin layer of ganache all over the cake and leave it to set in the fridge for half an hour. After this, spread a second, thicker layer of ganache. For a robust look, it is not necessary to do this neatly.

Roughly chop the pistachio nuts and place them on the top edge of the cake. Decorate with some edible flowers.
