
Chocolate Coconut Cake

Ingrédients
- 720 g FunCakes Mix for Cake Brownie
- 200 g FunCakes Mix for Buttercream
- FunCakes Spread Crunchy Milk Choco Coconut
- FunCakes Bake Release Spray
- 4 egg (approx. 200 g)
- 330 g unsalted butter
- 350 ml water
- Coconut flakes
- Mini Bounty’s

Preheat the oven to 180°C (convection oven 160°C) and grease the baking pans with baking spray.
Prepare 720g FunCakes Mix for Cake Brownie as indicated on the packaging. Divide the batter between two baking pans and bake the brownies for 40-45 minutes until fully baked. Turn the cake onto a cooling rack and allow it to completely.
If you only have one baking pan, divide the ingredients you need for the cake brownie and bake two separately.
Prepare 200 g FunCakes Mix for Buttercream as indicated on the packaging. Add flavour with the FunCakes Spread Crunchy Milk Choco Coconut.
Using a cake leveler, slice both brownies in two layers. Fill and layer the brownies with the buttercream, starting and finishing with the bottom of a brownie for a neat finish. Then spread the buttercream all around the sides.
Take some coconut flakes and press it along the side of the cake.
Put the remaining buttercream into a decorating bag fitted with a #1M nozzle and pipe small swirls ono the top of the cake. Press a mnini Bounty in some of the swirls. Sprinkle a few more coconut flakes in the centre.
If you cover the top with coconut flakes straight away and then try to pipe on top, it won’t stick, so pipe the swirls first and then fill the top with coconut flakes.
