  • 500 g FunCakes Mix for Sponge Cake Deluxe
  • 150 g FunCakes Mix for Enchanted Cream®
  • FunCakes Flavour Lemon (oil-based)
  • FunCakes Food Colour Gel Pink
  • FunCakes Food Colour Gel Orange
  • FunCakes Food Colour Gel Bright Green
  • FunCakes Food Colour Gel Yellow
  • FunCakes Sprinkle Medley - Happy Birthday
  • FunCakes Bake Release Spray
  • 150 ml water
  • 100 ml milk
  • 8 eggs (approx. 400 g)

Receta de Mini rainbow cakes

Preheat the oven to 180°C (convection 160°C) and grease the baking pan with Bake Release Spray.

Prepare 500 g FunCakes Mix for Sponge Cake Deluxe as indicated on the package in two separate batches. Colour each batch differently using food colour gels. Bake the biscuits for 30-35 minutes, then immediately turn them out onto a cooling grid to cool completely.

Prepare 150 g FunCakes Mix for Enchanted Cream® as indicated on the package and flavour it with FunCakes Lemon Flavour Paste (oil-based).

Divide the cream into two portions and colour them yellow and pink using food colour gels. Put the cream into two decorating bags with decorating tip #1M.

Use a cake leveler to slice each biscuit into three layers and cut out circles with a round cutter. Line the inside of the cutter with an acetate strip, securing it.

lace an acetate strip inside the cutter and secure it with a small piece of tape. Place a round piece of cake at the bottom and pipe a layer of coloured cream on top. Repeat with a piece of cake in the other colour, alternating until you have three layers of biscuit and three layers of cream. Sprinkle some FunCakes Happy Birthday Medley on top.

Carefully remove the ring and repeat until you have enough mini cakes.
